El presente libro muestra la propuesta y la experiencia desarrollada en El Fuerte, una localidad de setecientos habitantes de la Provincia de Jujuy-Argentina. En este lugar se tiene un grupo de pequeños productores de miel que realizan su actividad en forma totalmente artesanal. Se detectó que los productores solo comercializaban la miel de sus apiarios, dejando otros productos, como el propóleos, sin ninguna aplicación. Por otra parte, la Facultad de Ciencias Agrarias de la Universidad Nacional de Jujuy, cuenta con un Laboratorio de Calidad de Mieles, por lo cual era factible vincular a los productores con la Universidad, para monitorear la calidad de los productos y conocer la potencialidad de ésta explotación. Se planteó, en base a Seis Ejes, la posibilidad de diversificar el negocio apícola de los pequeños productores. Estos son: 1-Explotación de un nuevo producto: el propóleos; 2-Capacitación; 3-Colaboración entre actores involucrados: proponiendo la Conformación de la Asociación de Productores Apícolas El Fuerte, que servirá para, entre otras cosas, lograr el financiamiento de la Propuesta; 4-Vinculación Tecnológica; 5- Acceso al Mercado; 6- Acceso al Financiamiento.

It can provide an understanding of past or present biological communities as well as their trophic relationships, and can thus offer useful insights into ecosystem functioning. There is now a rapidly-growing interest amongst biologists in applying analysis of environmental DNA to their own research. Notre étude s intéresse à l application du système HACCP (Hazard Analysis Critical Control Point) au niveau de la SARL Nouveau Monde " Produits MITIDJA " spécialisée dans la fabrication des produits carnés. L étude s est fixée comme objectif, de détecter les points critiques après avoir mis en place les bonnes pratiques hygiéniques de fabrication. Nous nous sommes intéressés à appliquer le système sur toute la chaine de fabrication du pâté de volaille. A chaque étape, les sept principes du système HACCP ont été étudiés. Après trois mois de suivi par des constatations, des audits et des analyses microbiologiques et physico-chimiques, nous avons relevé trois points critiques. Cette étude montre clairement l importance de la maitrise des points critiques et du système HACCP afin d assurer la sécurité sanitaire du produit fini.
